Easy Saucy Spaghetti
What you need:
- 1/2 kg. ground beef, preferably lean
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 1/2 cups crushed tomatoes
- 2 cups beef broth
- 1 cup spaghetti pasta, broken in half
- 1 cup tomato sauce
- 1/2 cup tomato paste
- 2 tablespoons cooking oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 pinch red pepper flakes
- Fresh parsley, chopped (for garnish)
Heat the oil in a large pot over hot campfire coals. Saute onion until tender, followed by the garlic. Cook for 1 minute then add the ground beef. Cook for 5-7 mins or until cooked through. Stir in the beef broth, tomato sauce and tomato paste. Bring to a simmer. Add the pasta and cook, uncovered, until pasta is al dente, about 10 minutes.
Remove from heat. Transfer into serving bowls and top each bowl with fresh parsley before serving.
One-Pot Campfire Breakfast Skillet
What you need:
- 1/4 kg. sliced bacon
- 1/2 onion, chopped
- 6 eggs, beaten
- 4 cups potatoes, peeled and cubed
- 1 cup shredded cheddar cheese
In a cast iron skillet, cook bacon to desired doneness over slow burning campfire coals. Remove from the skillet and set aside. Cook the onion and potatoes in the hot bacon fat, about 10-12 mins, or until potatoes are tender.
Return the bacon to the pan then add the eggs. Cook until eggs are set, about 2-3 mins. Remove from heat and top with cheddar cheese. Allow to melt before serving.
Campfire Beef Stroganoff
What you need:
- 1/2 kg. lean ground beef
- 1/2 yellow onion, chopped
- 2 garlic cloves
- 4 cups beef broth
- 1 1/2 cups cremini mushrooms
- 1 cup egg noodles
- 1/3 cup sour cream
- 3 tablespoons flour
- 2 tablespoons butter
- 2 tablespoons Worcestershire sauce
- 2 tsp dried thyme
- Salt and pepper to taste
In a large pan or pot over slow burning campfire coals, melt the butter then saute the mushrooms for 3 mins. Add the onion and garlic and cook until tender. Stir in the ground beef and cook until browned and cooked through.
Add the flour, beef broth, Worcestershire, noodles and thyme. Stir and allow to simmer until noodles are cooked. Once cooked, add the sour cream and heat for 2 mins. Best served immediately.
