This Make-Ahead Sausage Breakfast Casserole has quickly become a favorite at our house. Sausage, cheddar cheese, and bread cubes baked in eggs, milk, and sour cream french onion dip. YUM! Make this casserole the night before and pop it in the oven when you wake up in the morning! PERFECT for overnight guests, hectic weekday mornings, and holiday mornings. It is equally delicious for lunch and dinner. Add this to your menu. It is sure to be a hit!

How to Make Sausage Egg Casserole

This casserole is super easy to make with only a few simple ingredients. In a large skillet, cook breakfast sausage over medium-high heat until no longer pink. Drain excess grease and crumble sausage. Cut or tear french bread slices into small pieces. Place the bread cubes into the bottom of a baking dish. Add cooked sausage and sharp cheddar cheese to the dish. In a large bowl, whisk together milk, eggs, sour cream french onion dip, salt, and black pepper. Pour the egg mixture over the sausage mixture. Cover the casserole dish with aluminum foil or plastic wrap. Place the dish in the fridge and refrigerate overnight. Remove the pan from the oven. Bake covered for 30 minutes and uncovered for 30 minutes or until the eggs are set.

  • What kind of sausage for a breakfast casserole? I use Jimmy Dean pork sausage. You can use any brand or flavor of breakfast sausage in this recipe.
    • Can substitute turkey sausage for a lower calorie option.
  • For the french onion dip, it is important to use a container of a refrigerated sour cream dip in this recipe. Look for Great Value, Prarie Farms, Dean’s, or Heluva Good Dip.
    • If you can’t find the sour cream dip, you can substitute sour cream and some onion soup mix.
  • You can use any cheeses that you enjoy. Pepper jack, Monterey jack, gouda, and mozzarella are all delicious!
  • This is a great base recipe. Feel free to add some vegetables to the casserole. Bell peppers, onion, mushrooms, tomatoes, bell pepper, and green onions are all great. 
  • Can you freeze Sausage Egg & Cheese Breakfast Casserole? Yes! Bake the casserole and cool completely. Cover the pan with plastic wrap and aluminum foil and freeze. To reheat, thaw and reheat covered in the oven or in the microwave.

Sausage Egg Casserole Recipe – sausage, french bread cubes, sharp cheddar cheese, eggs, milk, sour cream french onion dip, salt, and pepper. Can toss in any of your favorite veggies.   • 1 lb sausage
  • 8 (1-inch) slices french bread cut into cubes
  • 2 cups shredded Cheddar cheese
  • 2 cups milk
  • 8 large eggs
  • 1 cup refrigerated sour cream French Onion Dip
  • ¼ tsp salt
  • ¼ tsp pepper
  • Lightly spray a 9×13-inch baking pan with cooking spray. Set aside.

  • Cook sausage in a large skillet until no longer pink. Drain well.

  • Arrange bread in a single layer in prepared pan. Top with sausage and cheese.

  • Whisk together milk, eggs, french onion dip, salt and pepper. Pour over sausage and cheese.

  • Cover and refrigerate for 8 to 24 hours.

  • Preheat oven to 350ºF. Bake casserole covered for 30 minutes. Uncover and bake for an additional 30 minutes, until eggs are set.
