Grilled Spicy Citrus Sea Bass

What you need:

  • 4 sea bass fish fillets
  • 1 small onion, diced
  • 1 small piece (walnut-sized) fresh ginger, peeled and thinly sliced
  • 1 small bunch fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1 tablespoon chopped garlic
  • 2 teaspoons grated lime zest
  • 2 teaspoons minced jalapeno chilli
  • 1 teaspoon freshly ground pepper
  • Sea salt to taste

In a blender or food processor, combine the onion, ginger, cilantro, garlic, chilli, olive oil, lime juice, lime zest and pepper. Pulse until ingredients form a paste. Place the fish fillets in a container and season lightly with sea salt. Rub the paste evenly on both sides of each fish. Cover and refrigerate for at least 1 hour.

When ready, season the fillets with salt again. Spray grill pan with cooking spray and cook sea bass over medium high heat until cooked through, about 4-5 minutes per side. Remove from heat and transfer to serving plates.

Best served with a salad or grilled vegetables.

Garlic Paprika BBQ Shrimp

What you need:

  • 1 kg. shrimp, peeled, rinsed and dried
  • 1 large clove garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon coarse salt
  • 2 teaspoons freshly-squeezed lemon juice
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 lemon, sliced into wedges

To make the spicy paste, mix together garlic, olive oil, salt, lemon juice, paprika and cayenne. Smear paste into shrimp and allow to sit for at least 15 minutes. Place shrimp on a lightly oiled grill pan or thread into skewers.

Cook on a pre-heated grill over high heat until cooked through, about 2-3 minutes per side. Transfer to a serving plate and serve with lemon wedges.

Your barbecue can’t be better without a truly appetizing dish and nothing can be more appetizing than fresh seafood marinated with a delicious kick of spice!
