Looking for the best homemade waffle ever? Well, look no further. This recipe for The Waffle of Insane Greatness lives up to its name. It is insanely great! This recipe is from Aretha Frankensteins restaurant in Chattanooga, TN. It is a small eclectic restaurant with fabulous home-cooked food. I have been to Aretha Frankensteins for breakfast and it is AMAZING! It is a must-eat if you are in town! 

If you can’t make a trip to Tennessee, just whip up a batch of these waffles at home. They taste just like the restaurant. Crispy on the outside and light and airy on the inside. This is our favorite breakfast recipe for a lazy weekend morning. I usually make a double batch because these things fly off the plate!

How to Make Waffles of Insane Greatness

These waffles are super easy to make with only a few simple ingredients. In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add buttermilk, vegetable oil, egg, sugar, and vanilla extract to the dry ingredients and mix well. It is OK to have a few lumps in the batter. Let the batter rest for 30 minutes.

Preheat the waffle iron. Scoop the batter onto the preheated waffle iron and cook until crisp. Repeat with the remaining batter.

Helpful Tips & Frequently Asked Questions

  • Place waffles on a wire rack after they come out of the waffle maker. The rack keeps the waffles elevated so the bottoms don’t get soggy.
  • If you are making several batches of waffles, keep them warm in a 275 degree oven on a baking sheet topped with a wire rack.
  • Do not use non-stick spray on the waffle iron; the oil in the batter will allow the waffle to release easily.
  • Feel free to add chocolate chips, blueberries, or chopped pecans to the waffle batter.
  • How many waffles does this recipe make? The number of waffles you get out of this recipe will all depend on the size of your waffle iron.
    • I used a Belgian waffle maker and got 4 waffles.
  • Can extra waffles be frozen? Yes! Cook the waffles and cool completely. Place the cooked waffles in a freezer bag and freeze.
    • You can reheat the waffles in the microwave or in a single layer on a baking sheet in the oven.
  • Store leftovers in an airtight container in the refrigerator.

  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 cup whole buttermilk
  • ⅓ cup vegetable oil
  • 1 large egg
  • 1½ tsp sugar
  • 1 tsp vanilla extract
  • In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well.

  • Add the milk, vegetable oil, egg, sugar and vanilla and mix well.

  • Let the batter rest for 30 minutes.
