The creamy Blue Cheese Dressing and simplicity of a wedge salad just made of Iceberg lettuce wedges and some croutons on top is another salad experience! Video included!

Now let’s get to today’s star — The Wedge Salad 🙂

What is Wedge Salad?

I’m glad you asked! Wedge Salad is a crisp and refreshing salad option that can be served as a side or a light yet wholesome meal. Plus, it is a healthy, nutritious, and filling choice even salad haters will love thanks to the luscious  and ever so popular recipe for Blue Cheese Dressing!

A wedge salad is classically made using an iceberg lettuce cut up into wedges as the name suggests. More on how to cut the lettuce below.

The lettuce is then drizzled with a divine Blue Cheese Dressing which is my most popular dressing on the site! So you can’t miss it 🙂 If you’re not into blue cheese, try it with this delicious Greek Salad Dressing too! Caesar could be another dressing option.

At that point, a wedge salad is ready and usually some bacon bits are added over the top. I love the croutons over my wedge salad recipe more than the bacon version, and of course I love extra blue cheese crumbles! 

Ingredients for Wedge Salad

It doesn’t get simpler than this:

  • Iceberg lettuce
  • Homemade croutons (or store bought)
  • Blue Cheese Dressing –made with sour cream for a luscious and light taste that’s unlike any other blue cheese dressing you had!
  • Blue cheese crumbles
  • Seasoning
  • Chilli peppers or flakes (optional)

How to Cut a Wedge Salad?

The most important part of the wedge salad is cutting the iceberg lettuce to achieve the classic look!

Step 1
Take a head of iceberg lettuce and remove the outer layer of leaves. 

Step 2

Now, wash it thoroughly and remove the access water.

Using a serrated knife, cut the iceberg lettuce in half. Next, cut the halves diagonally into three parts. You’ll have 6 wedges of iceberg lettuce.

There you have the perfect wedge. You can further cut that wedge in half crosswise to have two equal wedges.

Now comes the assembling of the recipe!

Dressing for Wedge Salad

Once you have cut the iceberg lettuce into wedges, it’s time to dress it up so that you can dig into this scrumptious beauty!

  • Prepare the Blue Cheese Dressing. This can be made a week in advance! A hand drizzling the blue cheese dressing over the ice berg lettuce wedge
  • Add as much or as little of the dressing as you like! I love to cover the lettuce in drizzles rather than adding the dressing on the side. 

Now that the dressing is ready, it’s time to assemble and finish the recipe! 

How to Make Iceberg Wedge Salad?

Take your dressed up wedge of lettuce and add garlic croutons on top of the creamy dressing. It will stick to it and some may fall off to the plate.

Now put some sliced or chopped chilies (optional), along with blue cheese crumbles. 

Sprinkle some black pepper, walnuts for crunch, and your classic wedge salad is ready to be devoured!

Variety of Wedge Salad

Like I said earlier, there are many ways to make a wedge salad. The one I make is the classic wedge salad recipe; however, you can add extra toppings to the salad for more taste and tanginess.

A steak house favorite which I should’ve made here is adding Steak Bites  right over the blue cheese dressing. The combo if perfectly cooked steak bites over Blue Cheese Dressing , lettuce and croutons is truly NEXT LEVEL!! So I can’t urge you enough to try it!

For instance, you can add some diced tomatoes, avocado, red onions, green onions, lemon juice, chives, cucumbers, and even crumbled bacon to the wedges depending on your preferences or how much fulfilling you want the wedge salad to be!

As for the dressing, typically, a blue cheese dressing goes well with a wedge salad, but you can also use ranch or caesar dressing. 

Either way, you’ll be able to whip up a nutritious and flavourful wedge salad in no time!

How to Serve Wedge Salad Recipe?

It’s perfect as a side dish to a steak recipe–such as this Best NY Strip Steak or Grilled Steak with Rosemary Lemon Butter. You can absolutely serve with chicken too! Something like Air Fryer Chicken Breast or Air Fryer Chicken Wings or Grilled Chicken Breast Skewers. 

To make this salad a main dish with steak, then you can simply make some Steak Bites and use them as a topping to the wedge salad.

If you want this to be a vegetarian dish then it’s great as is, or served alongside my famous Pan Fried Potatoes 🙂 

Tips for Best Wedge Salad

  1. Always use a serrated knife to cut the head of iceberg lettuce to give it a clean look. A serrated knife is also known as a bread knife and has a scalloped saw-like edge, perfect for cutting through the hard exterior of the iceberg lettuce.
  2. Cut through the iceberg lettuce halves diagonally from the outer end towards the center for the perfect wedge look. However, cutting the halves into half again does the job too. 
  3. Once you cut the iceberg lettuce into wedges, make sure to run it under water to clean between all the layers of the leaves. You can do this step a bit earlier to let the excess water dry out from the leaves.
  4. Remove the outer leaves of the iceberg lettuce as they are usually wilted and quite dirty.
  5. Always use a fresh and cold iceberg lettuce to make your wedge salad crispy.
  6. Do not overload the wedges with toppings as they will keep falling off and make it difficult to eat. Keeping them minimal is the key. You can limit them to 3 toppings per wedge.
  7. Dice the toppings really small so that they stay attached to the wedge of iceberg lettuce.

Wedge Salad

Ingredients

  • 1
    iceberg lettuce
  • 1
    cup
    blue cheese dressing
  • 1 1/2
    cups
    croutons
    homemade or storebought
  • 1/8
    teaspoon
    each of salt and pepper
  • 1/4
    cup
    of blue cheese crumbles
    optional
  • 1/4
    teaspoon
    chili flakes
    optional
  • 3
    tablespoons
    walnuts
    chopped (optional)

Instructions

  1. Start by washing your iceberg lettuce and removing external layers as they will wilt the salad.

  2. Then use a serrated knife to cut the lettuce into two halves.

  3. Place the lettuce, cut side down on a board and then using the same knife cut along the diagonal of the lettuce into thirds.

  4. You should get three wedges out of each half a lettuce.

  5. The wedge is ready as is for use, or you can further cut each lettuce into half for a mini wedge.

  6. Now the salad is ready for assembly. Start with a good drizzle of Blue cheese dressing over the wedge.

  7. Now add the croutons and blue cheese over the dressing.

  8. The dressing will help them stick but even if some fall off the plate, it’s still ok.

  9. Finish off with seasoning and flakes if using. ENjoy
